The main restaurant at Kingfisher is a warm, open-sided space with orange tablecloths, bamboo chairs, and columns painted

in the same stone mosaic pattern that runs throughout the property. Dinner here, particularly as the evening comes in

and the outdoor lights flicker on has a particular quality that is hard to manufacture. The staff have been here long

enough to know the menu without reading from it.

There is also a casual outdoor dining area that is with longer communal tables under a zinc-roofed pavilion with open sides. It is

Uganda’s equatorial daylight is reliable and the light in the mornings, coming in at an angle through the trees, is genuinely beautiful.

The kitchen handles both continental and Ugandan dishes. Matooke, rolex, fresh tilapia from the lake all these appear

alongside pasta and grills. The fish is the thing to order. Sourced from Lake Victoria and prepared simply, it is as good as

anything you’ll eat in Jinja.
